Sherry Shallot Vinaigrette


Ingredients

5 oz sherry vinegar

8 oz olive oil

1 oz thyme, picked and chopped

2 oz shallot , fine brunoise

3 oz whole grain mustard

2 oz Honey

salt , to taste

pepper, to taste

Preparation

Combine all ingredients.

Serving suggestion:

  • 10 stalks of asparagus cut on bias

  • 10 cremini mushrooms,sliced thin

  • shallot sliced thin

Lightly saute asparagus, mushrooms, shallot in oil. Top with sherry vinaigrette while warm.
