Smoked Tomato Aioli


Ingredients

3 ea Smoked Tomato

1 cup  Smoked Blended Oil

1.25 cup Blended Oil

1 Tbsp Pasteurized Egg Yolks

1 tsp Lemon Juice

Salt, to taste

3 cloves roasted garlic

2 cloves fresh garlic

Preparation

Quarter the tomatoes. Smoke the tomatoes on a parchment lined rack for 1 hour at 200 degrees F. If necessary, continue to cook at 200 degrees until the tomatoes become more concentrated, but not fully dehydrated.

Blend in Vita-Prep with 4 oz regular blended oil until fairly smooth. Using Robot Coupe, combine egg yolks, lemon juice, and a pinch of salt.

Slowly emulsify in smoked oil, remaining blended oil, and tomato and oil mixture to make aioli. Adjust consistency with a little water if necessary.

Season to taste.
