Leche de Tigre


Ingredients

4 oz onion 

.25 ea jalapeno

.5 oz ginger

.5 oz agave nectar 

1.75 oz cod or white fish scrap

4 oz lime juice

1.25 tsp salt 

1.25 tsp sugar

1.75 cups ice water

If serving with Mahi:

1 lb diced mahi mahi

Red onion

Jalapeno

Chopped cilantro

Corn nuts

1 tbsp Olive Oil

Salt 

Preparation

Add all ingredients to a blender, blend for a minute and a half on medium, finish on high. 

If serving with mahi:

Combine mahi mahi, red onion and jalapeno. Cover with leche de tigre. Plate and top with crunchy corn nuts and garnish with cilantro.
