Carbonara Sauce


Ingredients

3 egg yolks 

3 whole eggs 

2 oz grated parmesan

¾ cup bacon

Preparation

Render the bacon in a pan.

In a bowl, combine eggs, egg yolk, salt and parmesan. Whisk together to incorporate.

Add cooked pasta to bacon pan and coat with bacon fat. Add a splash of the pasta water. Stir. Add the egg mixture to the pan and stir to coat. 

Plate and finish with a touch of olive oil.
