The Chipotle Chorizo Supremo Pie w/ Monte’s Fine Food
Preparation
For the Guajillo-Chipotle Pizza Sauce:
Heat the olive oil in a sauce pan over medium heat.
Cook the garlic for 30 seconds. Add the tomato paste and guajillo paste and cook for 2-3 minutes, or until fragrant.
Add the crushed tomatoes, chipotle puree, oregano, and basil and stir well.
Bring the sauce to a simmer and cook at a low simmer for 15-20 minutes, or until slightly thickened.
Buzz in a Vitamix for a chunky purée consistency.
Taste and season with salt, pepper, and sugar as needed.
For the Queso Mixto:
Combine and evenly mix the three cheeses.
For the Cilantro-Jalapeño Crema:
Quickly blanch (~10 sec) and shock the cilantro. Drain and dry well.
Puree the jalapeños, garlic, lime juice, and mayonnaise in a Vitamix until smooth and there are no visible specks of jalapeño or cilantro. Strain if needed.
In a large mixing bowl, fold the green puree into the crema. Season with salt and lime juice as needed. Thin with whole milk if necessary.
Build:
Preheat an oven and pizza stone to 500°F.
Build the pizza in the following order: pizza dough, sauce, chorizo, cheese.
Bake the pizza on a pizza stone in a 500°F oven according to the dough instructions or until done.
Remove the pizza and garnish with pickled jalapeños, sliced avocado, cilantro, crema, and cotija.
