Salsa Verde
Makes approx. 4 cups
Preparation
Blanch tomatillo, jalapeno, onion, garlic and scallions.
In a blender, process tomatillos, onions, garlic and jalapenos until smooth.
Add cilantro and process salsa until bright green.
Emulsify with extra virgin olive oil and season with salt.
Place salsa verde in Vita-Prep and puree until smooth.
Season to taste.

12 tomatillos
1 small onion or ⅓ large onion
2 cloves garlic
½ small jalapeno
½ bunch cilantro
20g olive oil
5g salt
