Salsa Verde Makes approx. 4 cups

Preparation

  • Blanch tomatillo, jalapeno, onion, garlic and scallions. 
  • In a blender, process tomatillos, onions, garlic and jalapenos until smooth.
  • Add cilantro and process salsa until bright green.
  • Emulsify with extra virgin olive oil and season with salt.
  • Place salsa verde in Vita-Prep and puree until smooth.
  • Season to taste.

  • 12 tomatillos
  • 1 small onion or ⅓ large onion
  • 2 cloves garlic
  • ½ small jalapeno
  • ½ bunch cilantro
  • 20g olive oil
  • 5g salt
