Cilantro Aioli Makes approx. 2.75 cups

Preparation

  • Blanch cilantro in water and puree in a blender.
  • Roast garlic and add to puree in blender.
  • Add lime juice and mayo.
  • Puree until fully combined and smooth.
  • Strain if necessary.

Ingredients

  • 1 cup Mayo
  • 1 bunch Blanched Cilantro Puree
  • 1 tsp Lime Juice
  • 3 cloves Roasted Garlic
  • ½ cup jalapeno, brunoise
  • ¼ cup extra virgin olive oil
