Makes approx. 14 arepas
Preparation
Mix flour and salt.
Add cubed butter. stir. once water is boiling, add about half quart to the bowl.
Stir with a large spoon to combine.
Work the butter through the dough as it forms.
Add water in stages until a sticky dough forms.
Allow dough to cool slightly before adding cheese.
Fold in the queso fresco and mozzarella.
Form them into arepa shape.
Griddle on 400 degree griddle or saute pan with a small amount of neutral oil.
Heat pan, place arepa, let griddle until a crust forms, for 2-4 minutes.
Flip the arepa, cook for a further 2-4 minutes.
Remove from heat.
Ingredients
10 oz (about 2 cups) white masarepa
1/2 oz (about 1 tablespoon) salt
1 oz (2 tablespoons) butter, cut into small cubes
2.75 oz (about 3/4 cup) queso fresco, grated
2.75 oz (about 3/4 cup) part-skim mozzarella
1/5 quart (about 3/4 cup) hot water
