Chef Garces’ culinary journey is shaped by his Ecuadorian heritage and upbringing as the son of immigrants. From an early age, food served as a language of memory, identity, and belonging — influences that continue to guide his approach today.

From opening his first restaurant, Amada, to building a diverse portfolio of dining experiences, Chef Garces has spent his career exploring flavors, techniques, and cultures from around the world. Along the way, earning recognition as an Iron Chef and a James Beard Award winner reinforced his commitment to creativity, discipline, and hospitality.

Community has always been central to Chef Garces’ work. As the son of immigrants and a longtime leader in Philadelphia’s hospitality community, he believes food can create opportunity and meaningful impact.

In 2011, he co-founded The Garces Foundation, an organization dedicated to supporting the immigrant community through access to healthcare, English-language education, and food security initiatives. This commitment reflects values that extend far beyond the kitchen.
